Abstract

This article analyzes, from a comparison of treatises and literary texts, the rich Iberian cuisine prepared by Christians, Muslims and Jews in their multiple affinities and differences, caused, above all, by the taboos and rituals of food preparation, specific to each religion. Products appreciated by one could be prohibited by another, such as pork, indispensable to Christians and forbidden to the other two religions.
