Resumo: O objetivo do estudo foi avaliar diferentes períodos de depuração em grumatãs sobre características sensoriais e bromatológicas da carne. Os exemplares de grumatã (1,5 a 2,0 Kg) coletados em barragem foram distribuídos ao acaso em tanques de 1000 L (cinco peixes por tanque) para serem depurados durante 0; 24; 48; 72; 96 ou 120 h. Ao final de cada período, os peixes foram abatidos em banho de gelo e o filé retirado manualmente. Parte da amostra foi cozida e utilizada para análise sensorial e outra parte destinada à análise da composição bromatológica. A análise sensorial não detectou diferença significativa entre os tratamentos, porém a depuração durante 96 h revelou maior aceitação do filé (66,84%) em relação ao filé dos peixes não depurados (58,02%). A bromatologia do filé revelou aumento de matéria seca e lipídios à medida que o tempo de depuração aumentou, ao contrário de proteína bruta e cinzas que foram sendo reduzidos. Considerando a aceitação do filé e a composição química, a depuração durante 96 h pode ser considerada a mais eficiente para os exemplares de grumatã utilizados no estudo.
Abstract: The objective of this study was to evaluate different periods of depuration in grumatãs on sensorial and bromatological characteristics of meat. The samples of grumatã fish (1.5 to 2.0 kg) collected in barrage were randomly distributed in tanks of 1000 L each (five fish per tank) that were purified for 0; 24; 48; 72; 96 or 120 h. At the end of each period, fishes were slaughtered in an ice bath and the fillet was removed by hand. Part of the sample was cooked and used for sensorial analysis and another part used for the analysis of the bromatological composition. The sensorial analysis did not detect any significant difference between the treatments, however, the 96 h treatment revealed a greater acceptance of the fillet (66.84%) in relation to fillet of the unpurified fish (58.02%). Fillet bromatological study showed an increased in the dry matter and lipids as the depuration increased, unlikely the crude protein and ash contents that were being reduced. Considering the acceptance of the fillet and the chemical composition, depuration during 96 h can be considered the most efficient for the examples of grumatã used in the study.
